Shakshuka (for those nights when you have nothing organised for dinner)

  • This is my go-to dinner when I have nothing organised - its also perfect for a lazy Friday night when you don’t want to ‘cook’ but also don’t want to order takeaway. So easy and you will likely have most of the ingredients already sitting in your cupboard. You can’t really go wrong with this dish so don’t stress if you’re missing any of the ingredients or are a bit loose with the quantities! I haven’t met a bad Shakshuka yet!

    INGREDIENTS

  • 1 red capsicum

  • 1 brown onion

  • 3 - 4 cloves of garlic

  • 2 tins of crushed tomatoes.

  • 1 teaspoon ground cumin

  • 2 teaspoons ground paprika

  • 2 tablespoons Extra Virgin Olive Oil (EVOO)

  • 2 organic eggs

  • 1 tin of mixed beans (or lentils or chickpeas)

  • Cheese of your choice (I often use a mix of Parmesan and cheddar)

  • Fresh herbs of your choice (I like a mix of coriander and parsley)

  • Fresh chilli or your favourite chilli sauce to taste

    METHOD

  • Wash and slice the red capsicum into thin strips

  • Dice brown onion and garlic cloves separately

  • Heat frypan on high and add EVOO

  • Add onion to hot pan and sauté for approximately 2 minutes without browning.

  • Add red capsicum to the pan of onions and fry for 1-2 minutes without browning. Continuously stirring.

  • Add garlic and spices to pan and stir.

  • Meanwhile rinse can of beans in a colander under cold water and add to pan, along with tinned tomatoes. Stir.

  • Turn heat down and simmer for approximately 3 mins

  • Crack 1 to 2 eggs per person on top of the tomato and bean mix

  • Cover pan with a lid and cook until eggs are half cooked through

  • Lift lid and sprinkle with cheese of your choice on top of eggs and put cover back on. Cook until cheese is is melted (yum!)

  • Turn off heat and sprinkle fresh herbs on top. Add chilli if desired.

  • Serve on its own or with a side salad, and a crusty slice of good quality baker’s bread.
