Delicious apple breakfast crumble

I like to prepare this crumble the day before it is going to be eaten. This means the morning we are going to enjoy it, I just get it out of the fridge and put straight into the oven. It cooks while we are getting ready for the day and lasts us for 2 mornings which I love.

INGREDIENTS
o   6-8 green apples, peeled and sliced or diced

o   1 whole bunch of rhubarb (optional)

o   1 tsp cinnamon

o   1 tbsp butter (optional)

Crumble

o   50g butter

o   100g almond meal

o   1 tsp ground cinnamon

o   80g maple syrup

o   100g rolled oats

o   1 cup almonds or macadamias

METHOD
1.     In a medium sized saucepan, melt your butter and then add diced apples, rhubarb (if using), syrup and cinnamon and toss to combine. Put the lid on and cook over a low heat for approximately 5-10 mins, until apples are softened. Stir occasionally.

2.     While the apples are cooking, make the crumble. Combine all ingredients into a high powered food processor or Thermomix and pulse until the mixture comes together to form a sticky ‘dough-like’ consistency.

3.     Add cooked apple to a medium sized pie dish and top with the crumble.

4.     Then, either cover it and put in fridge until the morning or cook immediately. When you’re ready to cook it, pre-heat your oven to 180 degrees and cook for approximately 10-15 minutes.

5.     Serve as it is or with a dollop of natural Greek yoghurt for extra protein.
