Pimped up coleslaw

Making our traditional faves work harder for us nutritionally is a great place to start in improving our health. This lighter and more fibre rich take on the much loved coleslaw will have your insides singing. It also makes for great leftovers, saving you more time and energy in the kitchen.

The ingredient quantities are to taste so use your creative licence to adjust according to your own tastes.

INGREDIENTS

Dressing

  • A big ‘dollop’ of Greek yoghurt

  • A big ‘dollop’ of good quality mayo (homemade even better!)

  • Juice of 1 large lemon

  • 1 teaspoon of mustard (i like Dijon or English mustard gives a good hit of flavour too!)

Add all ingredients to a bowl and whisk. Add the following salad ingredients to the dressing and mix to combine.

  • 1 red capsicum sliced thinly

  • 4-5 shallots

  • 1/4 red cabbage shredded

  • 2-3 large carrots grated

  • 1 bunch of coriander chopped

  • 2 sticks of celery chopped or diced

  • Black sesame seeds to sprinkle on top
