Loaded fries

Cooking time: Approx. 40 mins

Ingredients

60g butter, ghee or olive oil

1.5 kg potato/s (and/or sweet potatoes) scrubbed clean and cut into fries

1 tsp dried oregano

1 tsp smoked paprika

1 tsp sea salt

¼ cup flaked almonds 

4 spring onion/s -white part sliced

¼ cup parmesan cheese grated

¼ cup  feta cheese crumbled

1 avocado sliced

½ bunch/s fresh coriander leaves 

Method

1.    Preheat your oven to 220 degrees Celsius

2.    In a large baking dish add the ‘fries’, oil/ghee or butter, salt, oregano and smoked paprika and toss to combine.

3.    Bake for 40 minutes or until they are crispy on the outside

4.    Once the ‘fries’ are cooked top with the almonds, spring onions and cheeses and return to the oven for another 5 minutes.

5.    Remove from oven and serve topped with avocado slices and fresh coriander leaves

6.    Can be enjoyed on their own or alongside your favourite simple protein

 

Variations

Dairy-free: Bake the fries in coconut oil and replace the cheese with 1 tablespoon nutritional yeast, a good pinch of sea salt and a pinch of garlic powder.

Nut-free: Replace the almonds with pumpkin or sunflower seeds (or omit). 

Onion-free: Omit the spring onion.
