Lemongrass chicken sliders

Healthy eating never tasted so good! With exotic flavours of lemongrass and kaffir lime, these chicken sliders will leave you coming back to this recipe again and again.

Ingredients

1 tablespoon Extra Virgin Olive Oil

1 stem lemon grass, white part only, finely chopped

3 cloves garlic, chopped finely 

1 green onion (green shallot), finely sliced

1 tablespoon tamari

4 kafir lime leaves, chopped finely

400g Organic chicken mince

1 medium (250g) avocado, flesh chopped

1 x bunch picked Coriander leaves (if desired)

1 tablespoon lime juice

2 tablespoons extra virgin olive oil

8 sourdough buns*

1 small butter lettuce

Chilli sauce and good-quality mayonnaise, to serve

Optional Extra: microgreens – can be purchased at most green grocers or organic suppliers

*Can be bought from a good quality baker or replace with your choice of bun

Method

  1. In a bowl, combine the Extra Virgin Olive Oil, lemongrass, garlic, green onion, tamari, lime leaves and chicken mince. Stir to combine, then divide into 8 small flat patties. Set to one side.

  2. In a small bowl combine the avocado, cucumber, coriander, lime juice and olive oil. Gently fold the ingredients together.

  3. Heat a frying pan over a medium- high heat. Cook the chicken patties for 3-4 minutes on both sides or until cooked through.

  4. To assemble, lightly toast the buns. Add some butter lettuce leaves, then a chicken patty and a spoonful of avocado salsa. Serve with a dollop of mayonnaise mixed with your favourite chilli sauce.

  5. Optional: Sprinkle with microgreens for an extra nutritious and delicious hit
