Herby potato salad

Ingredients

  • 6 Desiree potatoes

  • 1 tbs apple cider vinegar

  • 1 tbs Extra Virgin Olive Oil (EVOO)

  • Juice of 1 lemon

  • ¼ cup good quality mayonnaise

  • 1 tsp Dijon Mustard

  • 2 tbs baby capers

  • 2 tbs chopped chives

  • 1 bunch of parsley chopped finely

  • Optional: ½ red onion diced

  • Salt and pepper to taste

Method

1.    Peel potatoes and cut in half. Place in a saucepan and cover with water. Add a big pinch of salt and then bring to boil and simmer until soft when you poke with a knife (approx. 15-20mins).

2.    Strain water off the potatoes in a colander and cool down with cold water. Place in large mixing bowl and sprinkle with a big pinch of salt and freshly ground pepper. Place in fridge to further cool.

3.    Make the dressing by adding the lemon juice, apple cider vinegar, EVOO, capers, mayonnaise and chives to a jug and whisking together.

4.    Take potatoes out of the fridge and slice halved pieces into quarters. Sprinkle with the fresh parsley (and red onion if you are using), and add the dressing. Mix all together until combined well.

5.    Can be served slightly warm but for even better health benefits serve cold for that increased resistant starch which our gut loves!
